Newbie Question - Sweetener |

I am trying to take over the cooking for a very ill wife and I know very, very little.
Many of the recipes call for 1/2 cup of sweetener. (Obviously, the amount changes.) What do people use for a sweetener? Thanks in advance, Rick |

There are various sweeteners available, depends on personal tastes or what you are making as to which one you may want to use. There is stevia, maple syrup,
molasses, agave, sugar. My personal favs are maple syrup and agave. What recipe are you making?

No specific recipe. I am just reading the book and shopping for ingredients. I'm trying to pick the easier ones.

hi rick
i like the turbinado sugar instead of the usual white processed sugar. its a little bit bigger than the tiny specks of white sugar, but its better for you, and you can get it in regular grocery stores now too. i use that for baking and everyday cooking, but i like agave nectar in tea and coffee. best of luck and hope your wife feels better. |

I like the turbinado sugar in baking---because of the size of the crystals, it sometimes stays sort of crunchy..... hope that doesn't put you off! I think
it depends on the recipe you're choosing.... a liquid might be better in some.
All we have to decide is what to do with the time that is given to us.

I use Florida Crystals instead of regular sugar (it's NOT bleached with bone char).
I use Demarerra or Turbinado sugar when I want bigger crystals and a more brown sugar flavor. I use maple syrup instead of honey or when I want maple syrup. I use agave nectar instead of honey when I want a more honey flavor. (I put this in almost everything, tea, cereal, etc.) I don't like barley malt. It's a bit like peanut butter but malty and sweet. Stevia is new to the USA. You'll have to read the labels of each individual brand. Stevia is a leaf that they extract a sweetner from, so it's not crystals like sugar and it's not a syrup, either. Some stevia comes as drops and you have to use a small amount or it will taste bitter. Some stevia comes as crystals and is designed to replace sugar, but it may not be a 1 to 1 replacement. Read the labels. It's good for diabetics or people who shouldn't have a lot of sugar. Each sweetener has a different amount of sweetness, and wetness, so write down what you use in each recipe and whether you liked that sweetner or had to cut back or add more of it. Also, if something calls for a dry sweetner, you can't just replace it with a syrup without cutting back on some of the other liquid in the recipe, and visa versa. Berna |
