My fiance and I are planning a wedding for June of 2010. The place we are looking at for both the ceremony and reception provides their own caterers and we
wouldn't be allowed to bring any outside caterers. They did mention that as they want to customize it to our needs, it may be difficult to provide a vegan
meal. Mind you, it is all buffet style so we really only have to stick to one main dish. On their menu samples they only have one (almost) vegetarian option
which includes the following:
mushroom artichoke lasagna, classic caesar salad, french bread, a fruit try and beverages.
I found a lasagna recipe in HIAV and caesar salad in veganomicon. Does anyone have any other ideas of meal options we could request that wouldn't need a lot of special ingredients and would fool all of our guests?
I am at a loss at this point as their veg option seems sort of boring.
